Wild Winter Salad

Since everyone else (see Now This, Genehack) is sharing what they prepared for our communal Thanksgiving meal, I feel like I need to do the same. This is a recipe that I created based on a dish that I first enjoyed at our favorite neighborhood restaurant, Chef Geoff's, configured slightly to our taste and then expanded to fill the need of the dinner party.

Wild Winter Salad

ingredients - amounts dependent on need; I will get one apple for two people, but that's for two people who like apples. For the 12 people at Thanksgiving, I used two large apples and that was plenty.

Field greens
Granny Smith apples
Walnuts (ends and pieces is fine)
Maytag blue cheese

Dressing

fresh crushed garlic (I like lots, but vary according to your party)
1 part balsamic vinagrette
1 part red wine vinagrette
4 parts olive oil

Instructions

Chop the apples into bite size pieces (not slices), do the same with the walnuts if they are whole, and crumble the blue cheese. Mix all together. Right before serving, dress the salad with the dressing.

It was well received, as it has been for the last two years I've made it.
